Khash: the soul-warming dish of Armenia

When winter arrives in Armenia and the mountains are covered with snow, it is time for the country’s iconic winter dish — khash. It is not just food, but a true ritual, a symbol of friendship, warmth, and cheerful mornings.

Khash is made from beef legs, slowly simmered overnight until it becomes a clear, rich broth. It is traditionally served early in the morning, usually with garlic, lavash, and strong Armenian brandy — and most importantly, in good company.

Traditionally, friends or relatives gather around khash to welcome a frosty morning together, sharing stories and laughter. It is not just breakfast, but a whole ceremony of connection, where food brings people together and warms them.
